Although eggs are rather high in fat, as part of a balanced diet they are a good source of protein and add variety. Limit to six a week.
1 large free-range egg
Dash of skimmed or soya milk
1 tbsp chopped fresh parsley
Small knob of butter
Thin slice of rye toast to serve
- Beat the egg with the milk and parsley.
- Melt the butter in a small pan over medium heat.
- Pour in the egg mixture. Cook slowly, stirring constantly.
- Serve with the rye toast.
