For a hearty complex carbohydrate version of the easy flapjack recipe try these cornmeal flapjacks. The complex carbs provide long-lasting energy. You can use this standard flapjack recipe as inspiration for your own creations. Use any kind of maize meal you like. We prefer finely ground white maize meal.
Cornmeal Flapjack Variations:
For a sweet topping add one or more of the following at the end of Step 2:
- Dried plums
- Finely ground cinnamon
For a savoury topping add one or more of the following at the end of Step 2:
- Sweet pepper

Easy Cornmeal Flapjack Recipe
- 3/4 cup white cornmeal or yellow cornmeal
- 1/2 cup all-purpose flour
- 2 Tbs sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk
- 2 large eggs
- 2 Tbs butter melted
- In a medium mixing bowl, combine cornmeal, flour, sugar, baking powder and salt; mix well. Set aside.
- In a small mixing bowl, whisk together milk, eggs and butter. Add to dry ingredients, mixing just until dry ingredients are moistened. Let stand for 5 minutes.
- Heat a lightly greased griddle or frying pan over medium heat until hot. For each flapjack, pour 1/4 cup batter onto hot griddle/frying pan. Turn flapjacks when tops are covered with bubbles and edges look cooked. Cook second sides until golden brown.
- Serve warm.
