This salad screams simplicity. Serve it as a side dish at either lunch or dinner or as a simple starter before lunch or dinner. Or turn it into a complete meal by adding a chopped hard boiled egg per serving.
It keeps well in the refrigerator for a day or two. You can create endless variations from the same batch simply by adding freshly chopped herbs such as parsley, dill, cilantro (coriander) and basil just before serving.
Serves 4 – 8 depending on how you use it.
3 cucumbers, peeled and sliced
3 medium sized tomatoes, cut into wedges
1 medium onion, sliced and separated into rings
1 teaspoon sea salt (or to taste)
1 teaspoon pepper (or to taste)
1 tablespoon crushed garlic (optional)
1/4 cup water
2 teaspoons sea salt
1 teaspoon ground black pepper
¼ cup olive oil
½ cup balsamic vinegar (or to taste)
- Combine all ingredients in a large bowl. Toss well to mix.
- Refrigerate at least 2 hours before serving.
